Dinner tonight...
Last night, I put all the ingredients together in my crock pot, covered it and put it in the refrigerator. I left a note for Chelsea to put it in the heater part of the crock pot and turn it on low before she left for class. If I turned it on before I left for work, it would be cooking way too long. I made brown rice to go along with it. The girls loved it, but Will turned his nose up at it because of the beans. Truly, the beans would have been very easy to pick out or just avoid. He's been picky lately. It was nice to have dinner just about ready when I got home. For myself, I sauteed garlic, spinach and tofu and had it over some brown rice. Yum! I can't remember where I found this recipe, somewhere on the internet.
Crock Pot Chicken W/ Black Beans and Cream Cheese
Ingredients:
4-5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn (I used an approximate amount of frozen corn)
1 (15 ounce) jar salsa , any kind (Pace is the favorite in our house)
1 (8 ounce) package cream cheese
Directions:
1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2. Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3. Keep in crock pot on high for about 4-5 hours or until chicken is cooked (I cooked it on low for about 7 hours).
4. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5. Stir to blend it all and enjoy!
